Irish Coffee Pudding is a delightful dessert that combines the rich flavors of coffee and Irish whiskey with the creamy texture of pudding. Here’s a detailed recipe for you to try:

Ingredients:

For the Pudding:

  • 1 ½ cups whole milk
  • 1 ½ cups heavy cream
  • 3 tablespoons instant coffee granules
  • ? cup Irish whiskey
  • 3 large egg yolks
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla extract

For Garnish (optional):

  • Chocolate shavings
  • A sprinkle of cocoa powder or a few coffee beans

Instructions:

  1. Prepare the Pudding Mixture:
    • In a medium saucepan, combine the milk, heavy cream, and instant coffee granules. Heat over medium heat until the mixture is warm and the coffee has dissolved. Do not let it boil.
  2. Whisk the Egg Mixture:
    • In a separate bowl, whisk together the egg yolks, granulated sugar, and cornstarch until smooth and well combined.
  3. Temper the Eggs:
    • Gradually pour about half of the warm milk mixture into the egg mixture, whisking constantly to prevent the eggs from curdling. This is known as tempering.
  4. Combine and Cook:
    • Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5 to 7 minutes.
  5. Add Flavor and Butter:
    • Remove from heat and stir in the Irish whiskey, butter, and vanilla extract. Mix until the butter is completely melted and the mixture is smooth.
  6. Chill the Pudding:
    • Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming. Chill in the refrigerator for at least 2 hours, or until set.
  7. Prepare the Whipped Cream:
    • When ready to serve, whip the heavy cream with the confectioners’ sugar and vanilla extract until soft peaks form.
  8. Serve:
    • Top each serving of pudding with a generous dollop of whipped cream. Garnish with chocolate shavings, a sprinkle of cocoa powder, or a few coffee beans if desired.
