Eiskaffee

A tall glass of cold coffee with scoops of vanilla ice cream in it and a swirl of whipped cream on top, eaten with a long spoon and drunk through a straw. In Germany, iced coffee means this. Ask for ice in your coffee and you will get a puzzled look.

Scale:

Note: Some cafés add a wafer roll on the side. It is not optional, according to most Germans over sixty.

Method

  1. Brew and chill the coffee

Brew filter coffee a little stronger than usual, stir in the sugar if using, and chill it in the fridge for at least an hour, or make it the night before.

The coffee has to be cold. Warm coffee melts the ice cream into a puddle in seconds.

    Chill 1 hour
  2. Ice cream in the glass

Put the scoops of ice cream into a tall glass.

  3. Pour the coffee over

Pour the cold coffee slowly over the ice cream, leaving room at the top.

  4. Cream, chocolate, spoon and straw

Top with a swirl of whipped cream and the chocolate. Serve with a long spoon and a straw.

Why this works

Eiskaffee is a dessert that happens to contain coffee, and it is constructed like one. Ice cream supplies the cold, the sweetness and the fat, so the coffee does not need to be sweetened much and does not need ice. As the ice cream slowly melts into the cold coffee, it emulsifies into it, turning the bottom of the glass into a sweet, creamy coffee milk. That is the drink at its best, about five minutes in.

The coffee has to be chilled first for a simple reason. Ice cream is a frozen foam of fat, sugar and air, and its structure collapses quickly when warmed. Hot or even warm coffee melts it in seconds into a thin, sweet liquid. Cold coffee melts it gradually, so you get both the scoops and the creamy mix.

Filter coffee rather than espresso suits it because it is longer and lighter, and there is a lot of it in the glass. Brewing it a little stronger than usual keeps the coffee flavour present once the ice cream and cream have softened it.

German cafés and ice cream parlours, many of them run by Italian families since the 1950s and 60s, have served Eiskaffee on summer menus for generations, usually alongside its chocolate cousin, Eisschokolade. It is the reason why, in Germany, a request for iced coffee produces a sundae.

Variations

  • Eisschokolade: cold chocolate milk instead of coffee, with the same ice cream and cream.
  • With espresso: a double espresso, chilled, topped up with cold milk, over the ice cream.
  • With egg liqueur: a spoon of Eierlikör over the cream, an adult version.
  • Affogato: hot espresso over a single scoop, the Italian approach. See affogato.

Questions

What is Eiskaffee?

A German café drink of cold coffee poured over vanilla ice cream in a tall glass, topped with whipped cream. It is served with a spoon and a straw.

Is Eiskaffee the same as iced coffee?

No. In Germany, Eiskaffee always means coffee with ice cream and cream. Coffee over ice cubes is a different and much less common drink there.

Can I use hot coffee for Eiskaffee?

No, it melts the ice cream immediately. Brew the coffee ahead and chill it completely.

What is the difference between Eiskaffee and affogato?

An affogato is a hot espresso poured over a scoop of gelato and eaten quickly. Eiskaffee uses cold filter coffee in a tall glass with more ice cream and whipped cream.
