Caffè Breve

A latte built on half and half rather than milk. Twice the fat, noticeably sweeter, and a foam that behaves differently enough to catch you out the first time.

Ingredients

Scale:

Note: Half and half is about 12 percent fat against whole milk at 3.5 percent. That is the whole difference and it changes both the taste and the steaming.

Method

  1. Pull a double

Into a 250 ml cup. A breve wants a strong shot underneath it, because the fat coats the tongue and mutes the coffee more than milk does.

    25 to 30 seconds
  2. Aerate briefly and watch the temperature

Two seconds of air at most, then submerge and spin.

Half and half foams fast and collapses fast, and it scorches at a lower temperature than milk. Pull the wand at 55 to 60°C rather than 65°C.

    Aerate 2 seconds
  3. Pour straight away

Do not let it stand. A high-fat foam separates within seconds, far faster than milk, so swirl once and pour immediately.

It will pour heavier and slower than milk, and latte art is harder.

Why this works

Fat is the variable. Half and half runs around 12 percent fat where whole milk is about 3.5, and fat does three things at once: it coats the tongue so the drink feels heavier, it carries fat-soluble aromatics that water cannot, and it mutes acidity. The result is a rounder, sweeter, much richer drink than a latte made with the same shot.

That sweetness is real but it is not sugar. Half and half has slightly less lactose per volume than milk, so a breve is not sweeter in the chemical sense. It reads as sweeter because the fat suppresses the bitter and sour notes that would otherwise stand out, leaving the sweet ones unopposed.

Steaming is where it surprises people. Fat interferes with the proteins that stabilise foam, so half and half aerates quickly into a thick foam that then collapses quickly. It also scorches earlier, because there is less water to buffer the heat. Both problems point the same way: less air, lower temperature, pour immediately.

It is an American drink and the name is an Italian word that Italy does not use this way. Breve means short, which describes nothing about it.

Variations

  • Breve cappuccino: more aeration, served smaller.
  • With cream only: heavier again, and very hard to foam.
  • Half breve: half milk, half half-and-half, which steams more like milk.

Questions

What is half and half?

Equal parts whole milk and single cream, around 10 to 12 percent fat. It is sold ready mixed in America; elsewhere, mix it yourself.

Breve vs latte?

The dairy. A breve uses half and half instead of milk, so it is roughly three times the fat: heavier, sweeter tasting and considerably more calorific. The coffee comes through less.

Why does my breve foam collapse?

Fat destabilises foam. Aerate for no more than two seconds, cut the steam at 55 to 60°C, and pour straight away. A breve foam will not sit in the jug the way milk does.

Can I do latte art with half and half?

It is much harder. The foam is heavier and less stable, so patterns blur as you pour. A simple heart is realistic; a detailed rosetta usually is not.
