How to Brew with a Clever Dripper

Steeps like a press and drains through paper like a pour over, which gets you body and clarity at the same time. No pouring skill involved at all.

Ingredients

Scale:

Note: It takes a size 04 cone filter, the same as a large Melitta. Easy to find and cheap.

Method

  1. Rinse the filter

Sit the paper in, rinse with hot water, and let it drain into the mug by resting the dripper on it. Tip that water away.

  2. Add everything and stir

With the dripper off the mug so the valve stays closed, add the coffee and pour in all 300 g. Stir once to wet every ground.

  3. Steep for three minutes

Put the lid on and leave it. Nothing drains while the dripper is standing on the bench: the valve only opens under the weight of a cup.

    Steep 3 minutes
  4. Set it on the mug and let it drain

Place the dripper on the mug. The valve opens and the whole brew drains through the paper in about a minute and a half.

Lift it off when it stops dripping. Do not press or squeeze it.

    Drain 1:30

Why this works

Every brewer trades body against clarity, and this one refuses to pick. The steep is full immersion, so every ground sits in water for the same three minutes and extracts evenly, with none of the channelling that makes pour over a skill. Then the paper catches the oils and the fines on the way out, so the cup arrives clean.

The valve is a simple silicone stopper held shut by its own weight and opened by the rim of a cup pushing it up. There is nothing to go wrong and nothing to learn.

Because the paper is doing the filtering, you can grind finer than a press without getting silt. Medium is the sweet spot: fine enough to extract properly in three minutes, coarse enough to drain before the coffee over-extracts while it waits.

The drain time is part of the brew, not an afterthought. Those ninety seconds are still extraction, which is why the total lands around four and a half minutes and why a grind much finer than medium tips the cup into bitterness.

Variations

  • Bigger: 30 g to 450 g, steeped four minutes.
  • Tea-like and delicate: grind coarser and steep five minutes.
  • Iced: 24 g to 200 g of water, drained onto 120 g of ice.

Questions

Clever dripper or French press?

The Clever gives a cleaner cup because of the paper, and there is no silt and no plunging. The press gives more body and more texture. If press coffee has ever tasted muddy to you, the Clever solves that.

What filters does it take?

Size 04 cone papers, the standard large Melitta size. They are cheap and sold everywhere.

Can I steep longer than three minutes?

Yes, with a coarser grind to compensate. Four or five minutes at a coarse grind gives a rounder, less acidic cup. Long steep plus fine grind is the one combination to avoid.
